  • 5 lb pork roast
  • 6 potatoes red or russet
  • 2 onions large
  • 2 apples Granny Smith
  • 1 lb carrots
  • 1 qt chicken broth or beef broth
  • 2 tbsps garlic minced
  • Olive oil
  • Lemon juice

Dry Rub

  • ½ cup brown sugar
  • 1 tbsp black pepper coarsely ground
  • 1 tbsp salt kosher
  • 1 ½ tsps garlic powder
  • 1 tsp mustard powder
  • ½ tsp ginger ground
  • ½ tsp onion powder
  • ½ tsp red pepper flakes
  • ½ tsp cayenne pepper
  • ½ tsp cumin ground
  • ½ tsp paprika smoked
  • ¼ tsp thyme leaves dried
